Parmesan Chicken
1 clove garlic, minced
about 3 Tbsp. unsalted butter, melted
dried bread crumbs
grated Parmesan cheese
chopped fresh parsley
garlic salt
Italian seasoning
ground black pepper
2 boneless, skinless chicken breasts, cut into pieces
Preheat oven to 450°. Melt butter in a bowl; add minced garlic and stir. In another bowl combine bread crumbs, Parmesan cheese, parsley, garlic salt, Italian seasoning, and black pepper. Dip chicken first in butter mixture then in bread crumb mixture. Place on a baking sheet sprayed with cooking spray. Drizzle with any remaining butter. Cook 15 minutes or until cooked through.

It was really good! It smelled extremely strong while it was cooking, but it had a nice garlic flavor.

Jen- I want to make this tonight, but I don't know how much bread crumbs, parmesan, parsley and garlic salt to use. How much did you use? Thanks!

I usually don't measure when I cook. For 2 chicken breasts I used about 1 cup or so of crumbs and maybe 2 Tbsp. of freshly grated parmesan, a couple sprinkles of parsley, and maybe 2 tsp. of garlic salt. If you go to Simply Recipes and type parmesan chicken in the search field the original recipe will come up with exact measurements.
